Our beverage infusion line is quickly becoming one of our most sought-after product lines. Specifically designed for cider, seltzers, and mixed drinks, the formulation makes bringing creativity to life, easier than ever!
Depending on who you ask, extracts and natural flavors are sometimes interchangeable. There are some archaic laws dating back to prohibition that stipulate what an extract is, specifically involving vanilla. It requires the content of alcohol to be higher than 35%. We actually try not to use alcohol as a carrier and have found better alternatives that keep the extract closer to the true flavor of the source.
As far as use, extract and/or natural flavors will generally contain no color, fruit filament, acidity, or sweetness, only flavor, and nose. There are some exceptions but, as a rule, they are easily used without concerns about fermentation and are highly concentrated so the use level is low. They work really well in sweeter ciders as the sugar platform helps the extract to really come through. For a drier cider, you may find you need to back-sweeten the cider to pull the flavor through. As sugar is the stage at which flavor dances, the lower the sweetness, the less you will taste an extract.
Alternatively Craft Purees, Beverage Infusions, and Artisans will all contain a tremendous amount of the fruit. With that, you will get the color, flavor, fruit filament, acidity, and of course sugars of the fruit itself. Fermentation will occur and these products will color the cider according to the fruit of choice. How much it will color the cider will depend on the use level and the fruit. For example, blueberry will have a significant effect on the color while peach will have a minimal effect. The Artisans are the most concentrated version of the fruit we produce. The will be similar to a honey paste consistency and be 65-75 brix. The Craft Purees and Beverage Infusions are slightly less concentrated and the consistency is closer to that of a juice. The Craft Purees tend to be a little more on the Tart side while the Beverage Infusions, slightly sweeter. In addition, the Beverage Infusion line contains more combination flavors including a whole line of different lemonades and teas. Strawberry Lemonade is by far our best seller but I’m sure we’ll see Blueberry Lemonade as a close second this summer.
We try to source all of our ingredients within the US but we pride ourselves in sourcing the best ingredients which occasionally takes us outside the US. If pineapples are currently better in the Philippines, we will source them there, if Hawaii has a better batch right now, we will source them there and we obviously get our Madagascar Bourbon Vanilla from Madagascar.
