Now called Harvest Cider, the new name reflects the vibrant juice inside from apples pressed fresh immediately after picking, when flavors, sugars, and acid are at their peak.
Eden’s Harvest Cider is produced once a year from a blend of locally grown heirloom and tannic apple varieties via traditional winemaking techniques to capture their brightest flavors. Since apples are biennial, the second edition differs deliciously from the first, crafted from a new blend of five heirloom and table apples grown on five small Vermont orchards.
This superbly crushable cider has even brighter acidity, and a delightful honeyed finish, due to a masterful mixing of juice from the Dabinette, McIntosh, Empire, Spartan and Esopus Spitzenberg varieties. Dabinette contributes vibrant floral notes; Espous Spitzenberg adds extra crispness and a touch of lychee/Asian pear; and the McIntosh and Empire apples contribute red-fruited aromatic complexity and juiciness.
Directly after autumn harvest, when the fruit is at peak ripeness, apples are gently pressed before the juice begins its slow, cool fermentation. Fermenting the juice like wine, slow and cool, allows all of the precious flavors to develop over time, and express the unique character of the varieties and the places they were grown. The result is a lip-smacking 6.4% cider with no added sugar or flavorings.
